- 4 cloves - garlic
- 1 small - onion - chopped
- 3 habanero chiles - fresh
- 1/4 cup - lime juice - fresh
- 2 tablespoons - tamari
- 3 tablespoons - olive oil
- 1 1/2 tablespoon - salt
- 1 tablespoon - thyme leaves
- 2 teaspoons - allspice - ground
- 2 teaspoons - black pepper - ground
- 3/4 teaspoon - nutmeg - ground
- 1/2 teaspoon - cinnamon
- 3 lbs - chicken thighs and drumsticks
Directions
- Blend all ingredients besides the chicken in a blender until smooth.
- In a large Ziplock bag, add chicken and marinade. Squeeze out the air and seal. Squish around to distribute the marinade. Refrigerate for 1 day, turning the bag over once or twice.
- When you're about ready to cook, take the chicken out and let it sit for about 1 hour.
- Preheat grill on high, then turn heat down to moderate. Cook chicken for about, 15 to 20 minutes, turning to brown on all sides. Occasionally brush any leftover marinade on chicken as you cook.
- Turn heat down to low and cook, covered, for about 25 minutes more.
- Serve the chicken with a tropical fruit salsa, citrus kale, fried plantains, or whatever else you think might sound nice!

Crispy Chicken – If you’re looking for deliciously crispy pan seared chicken, the folks at America’s Test Kitchen suggest that—contrary to what you might think—the key is a cold pan or skillet, not a searing hot one like you’d have for a steak. Here’s why. The key is that by allowing the chicken and the pan to come up to temperature together, you have enough time for the chicken to render its fat, cooking the skin nice and crispy without overcooking the rest of the meat. You’ll probably need to pierce the skin a few times with a sharp knife to give the fat somewhere to render out, but other than that, there isn’t much more to this tip.
